Quick lunch, steak & chips….. the pan sauce with the steak was amazing. Real easy, when steak was almost done(cooked it medium rare). I added about 20 grams of butter to pan, basted steak for a few seconds. Set aside steak to rest, deglazed the great fond(caramelised meaty bits) on the pan with brown chicken stock, reduced it down a lot. Seasoned it with a few drops of lemon juice…. finished… done… mambo kwisha!!!!!

That dish looks so yummy!
How much salt and which spices did you put on the steak? I prefer a little bit of salt and loads of pepper and that’s it.
And the chips: fried once or twice? I prefer twice.
@rafiki Sema! This was a really really simple steak. Just salt & pepper. The chips were oven baked, first I parboiled them for 15 minutes, then tossed them in some olive oil, salt & some sprigs of thyme. Baked for about 30 minutes.
The best chips I have ever made, were actually triple cooked. It’s a technique by Fat Duck chef Heston Blumenthal. Look it up, its amazing….
